My roommate and I never see each other. We have such busy lives, we can go days without so much as a “hello”. However, one Sunday afternoon, we found ourselves at home, and we were HUNGRY. Instead of going out, we decided to walk over to the kitchen and cook something (cue the frightening music!!)

Ok, ok… it wasn’t that frightening! But we had no idea what to make. What would be quick, easy, and tasty? And what ingredients did we have in the house???? Then, I remembered the brown paper bag I’d stashed on top of the refrigerator… with red russet potatoes!

We quickly ransacked the kitchen for spices, herbs, and other fresh veggies we had lying around. This is the recipe we came up with!

Easy Fried Potatoe Recipe

Red russet potatoes, washed and cubed

olive oil

rosemary

2 cloves of garlic

half of a green pepper

1 small onion

salt and pepper to taste

1. Take your chopped potatoes and place them in a medium bowl. 2. Put your garlic, onions, and pepper into a food processor and chop for a few seconds. 3. mix your chopped veggies with the potatoes, and add about 2 tsp of rosemary and 3 tbsp of olive oil to coat the veggies. 3. In a medium skillet, fry the potatoes in enough oil to cover them until browned. 4. Drain the potatoes and serve with ketchup, BBQ sauce, or your favorite toppings!
